The original idea behind creating this book was to help people who want to deepen their knowledge of vegetarian cooking, or who simply want to introduce a new, healthy, balanced, and sensory way of eating into their diet in an easy and organized way. It aims to be a practical tool to help you eat healthily while maintaining a high level of nutrients. I share this through the knowledge I have gained over many years as a vegetarian chef, nutritionist, and cooking instructor.

Food is a broad and important concept that deserves special attention because
it is the energy that moves us as human beings.
This book has precisely that purpose: to provide guidelines for a balanced diet, both in concepts and in recipes.
A high consumption of plant-based foods also brings countless long-term health benefits,
allowing us to continuously invest in our well-being.
The type of cuisine covered is ovo-lacto-vegetarian, based on Mediterranean cooking principles and enriched with culinary influences from other cultures.
A wide variety of foods and products are used to demonstrate their different applications,
with the sole aim of understanding and making use of all of them.
This makes the book helpful not only for vegetarians but also for strict vegans.
The cooking style is simple, with
mild flavors that allow the natural aromas and tastes of each ingredient to shine.
The cookbook, drawn from my years of creative work as a vegetarian chef in my own restaurant, is deeply personal and thoroughly tested.
By preparing our daily vegetarian meals, we also contribute to
the sustainability of the planet and the support of rural environments.
